I caught up with a gorgeous friend for morning tea, and before we both realised it was 12.45 .... i guess time flies when you are having fun! I did decide to make more of an effort to socialise this year ... as last year on my fridays off, i just found it blissful to have peace and quiet and enjoy my own time. However .... you do need to spend time with people to maintain relationships, so that is a focus for me, and i am enjoying it i must say! We have a really fun group of kindy mums this year and on a friday we stop for a cuppa after drop off ... its been great, howe
ver today i wasn't able to as i had to help Gary out with dropping off his ute.

I made these cards yesterday, one for my friend i met today ... and the other for my nephew who is ONE tomorrow .... i wish we were going to his little party! boo hoo! he is super cute! i can't wait to see pictures! The invisibles are awesome to use for cards ... i love the result.
Katya has a new bike ... so tonight the big girls rode their bikes with Gary pushing Gi in the running pram while walking Daisy! I went for a run and should have met up with them coming back, however ... i obviously ran further than i thought and only just got them as we were going up the hill ... oh man, it ended up being quite a hard run (due to the fact i was thinking i would be walking the last 3 kms ... ) i am thinking i will sleep well tonight! i am thinking i deserve a piece of carmel slice for my hard work ... he he!
Family Movie Night tonight was High School Musical 3 ... the girls were SUPER EXCITED, even tho we've seen it before ... so cute! I made a beef korma curry ... it was really yum. maybe i'll share the recipe it was from a magazine ... maybe Woman's Day? i can't really remember i got it from the hairdressers the other day! I did a double batch, so have a few extra dinners in the freezer now ... LOVE THAT!
BEEF KORMA - serves 6
1kg Gravy Beef
2 Tblsp oil
2 onions , thinly sliced
2 cloves garlic, crushed
3 cm fresh ginger grated
1/4 cup korma curry paste
2 Tblsp tomatoe paste
400g tin tomatoes crushed
400ml tin coconut cream
1/2 cup coriander chopped
salt and pepper
1/4 cup cream
1/4 cup almond meal
Cut beef to 3 cm cubes, combine with 1 Tblsp oil. Divide into 4 equal portions and cook one portion at a time for 2 mins - remove.
Heat remaining oil, add onions, garlic, ginger, korma paste and cook stirring until onions are soft.

Return beef to the pan, stir in tomatoes, tomatoe paste and coconut cream. Bring to the boil - cover!
Cook in moderate-low oven (160degreesC) for 2 hours
Remove from oven, stir in almond meal, cream and coriander - season with salt and pepper
Garnish with flaked almonds .... serve with rice!
